I have watched multiple vehicles (all heavy armour) run over and explode mines without any visible damage...? Definitely enemy as they stop to kill me after hitting them...? Does it take more than one to kill an armoured vehicle?

Those were anti-personnel mines, not AT mines. AP mines are carried by Engineers. AT mines are carried by Anti-Tank soldiers.
